Android apps you recommend

Dolphin HD (tabbed browser, better than default IMO)
Camera ZOOM (better camera app, lets you add effects)
Handcent SMS (much better SMS than default)
Movies (movie show times and such, if you like going to the movies)
Tricorder (it's a fun app, actually does stuff, Trek fan must have)
Wapedia (quick wikipedia app)
PrinterShare (link your droid to your computer's printer so you can print right from your phone)
There's a few that I think are good to have.

One suggestion for you - go into settings and set the battery profile to 'smart' and set peak and off-peak hours, so that it cuts the data connections when you aren't using it, the battery life is greatly extended that way.
(Unless you want the motoblur stuff running all the time...)
I'd go with Mediafly over Listen. Better interface and it does videocasts as well.
MixZing for a replacement for the default media player.
Shopper: Google goggles, but with an emphasis on price comparison vs generalized search.
Your carrier's visual voicemail app. Beats the hell out of pressing #.
Rush Hour is a good puzzle game.
Word Mix, Open Word Search and Word Up are great (shockingly) word games
Real Calc Scientific Calculator, even if you don't use the advanced features, it's still better than the default Android calc.
Launcher Pro (Beta) is an unbelievably good home screen replacement. Looks like stock, but supports landscape on touchscreen only devices, has a app dock at the bottom, and runs smoother than even Android 2.2's home screen. Not sure if it works with MotoBlur customized ROM's, but I think you'll be fine since Motorola didn't do to thorough of a screw job on it, unlike HTC and its branded devices.
Absolutely agreed on Launcher Pro. I'm not using it at the moment as I'm on the Nexus Desire rom currently, but it's crazy smooth and I love the customizable app dock.
I'm also a fan of Beautiful Widgets for clock/weather on my home screen as well as Pure Music for a music widget.

Fring, for webcam-chatting in a pinch. While chatting, they'll be able to see you, but you won't be able to see them (screen on one side, camera on the other). And no, you don't need an Evo. Just a video cam on your android and a Skype account linked up to Fring.

--NewsRoom: First discovered this on the Pre, and the Android version is even more flexible. Arguably the slickest news reader out there, i.e., doesn't look like it was programmed in an hour by a Comp Sci 101 student.
--XiiaLive: Streaming radio app.
--EStrongs File Explorer: Local file manager that can also connect wirelessly to your PC so you can copy files in shared folders.
--Vignette or Camera 360: I just downloaded these the other day but they both seem to be very capable photo effect editors. I don't have a preference quite yet.
--WeatherBug: I'm a weather junkie and this one delivers all the weather news I need.
--JuicePlotter: Vital for testing battery level over time. I just got my HTC EVO two weeks ago and haven't had a chance to test out the effects of having a task killer yet (seems to be the biggest debate in the Android community with arguments both ways), but JuicePlotter will play a big role when I do finally test it out given my usage habits.

JuicePlotter's sister program, JuiceDefender, is also very nice though to get full functionality you need to buy the UltimateJuice plugin. It lets you setup a schedule for your data connection when the screen is off (default is on for 1 minute every 15), has a night mode which can silence your phone and disable data overnight, a location aware mode which automatically enables wifi when you're near remembered access points and a few other features as well.
I like it because you still get a delayed push for emails and don't have to turn syncing off entirely. I get through the workday with about 60% battery left on average, and while I don't think JuiceDefender is a requirement for good battery life, it does help a bit.
