Evidently, on occasion they enjoyed buggying over into Mennonite-country to kick some ass...

Thanks. Googled the passages and they don't say much beyond the fact that the people still use horses and buggies, even in the 23rd century.

I've been toying for a while with the idea of what a
Star Trek universe-set Amish romance might look like.

Amish? They're the individuals in America who for some ridiculous reason hate technology aren't they?
 
Not Amish, but in Burning Dreams there is a group of people in the 23rd century (on a colony world at that) who intentionally limit themselves to 20th century technology.

Also not Amish, but who can forgot the Neo-Transcendentalists of TNG's "Up the Long Ladder," or the colonists in DS9's "Paradise?"

Good for them I guess. If it wasn't for modern technology, I wouldn't be alive, nor would millions, if not billions of others.

Their having emigrated to America for religious freedom (and they continue to start new settlements - one recently in PEI) makes it a natural extension for them to later be ideal interplanetary colonists as well.
