I'm not bowled over by anything I've heard or seen thus far. I feel the best about Ahsoka, though the teaser didn't leave me excited like the Kenobi teaser did. The glimpses of the lightsaber action scenes looked very stilted, and hopefully they'll be more fluid on the series. The Acolyte has an intriguing cast, but I haven't gotten into the High Republic. Skeleton Crew also doesn't appeal to me and seems like a waste of Jude Law.
I don't really care about the Dawn of the Jedi idea. I didn't read many of those comics (though I did love the artwork and if I recall the Rakata), or the novels. I liked the EU a lot more than Disney Star Wars so it was neat to get the little nods I did see in the Ahsoka trailer.
The biggest announcement to me was Rey. It's a logical move. All the sequel films were billion-dollar movies, so it makes financial sense in a sense to return to the sequel lead character. That said, those films were also divisive and this could be a test to see how much the mass audience really likes the sequel characters. I suspect that a lot of people went because it was Star Wars and others to finish the trilogy. That said, the new Rey film will still be Star Wars and perhaps the brand name will still have that drawing power. Nothing against Ridley, but I found Rey to be poorly developed and wasn't that interesting a lead. Ridley's performance is what made the character work for me, when the character did work for me. I'm not enthusiastic about another movie or several about Rey, though I am curious to see what Disney's post-sequel plans are.
I do think it's too soon to go back to Rey. If this was actually 15 years after Force Awakens that would make more sense. By then nostalgia would've done some of the work, and perhaps Disney Plus would've used its series to make the sequels more palatable like Lucas did with Clone Wars when it came to the prequels.
