The first three were written to end with some semblance of closure(at least for the immediately important plot threads) and then jump ahead several years to the pick up where the characters ended up. Due to necessary restructuring and a desire to skip the constant flashbacks, he took out the big time gap and filled it in with books four and five. If you have to stop anywhere, the end of Storm of Swords is the place to do it.
