Captain
Just finished reading my Star Trek Encyclopedia and to my surprise they listed 45 classes of Star-Ships.

Here is the list, not in order...

Excesior
Steamrunner
Deadalus
Galaxy
Soverign
Mediterranean
New Orleans
Sydney
Danube

Nebula
Olympic
Oberth
Soyuz
Bradbury
Miranda

Chimera
Niagara
Akira
Merced
Hokule'a
Springfield
Freedom
Istanbul
Constitution
Defient
Yorkshire
Wambundu
Andromeda
Intrepid
Saber
Sequoia
Yellowstone
Zodiac
Surak

Does anyone recall all these classes's being shown in any/all Treks ???

Some of those are kitbashes that would only have quick cameos like in a DS9 battle scene or the Wolf 359 graveyard. Others like the Renaissance are only mentioned in dialogue or on a graphic and never truly seen.

So to answer your question, while they all may canonically exist, we can't tell what they look like.

Don't some of those classes have no standing in canon apart from the appearance in the encyclopedia?

Lifted this from MA
The authors of the Star Trek Encyclopedia made several references to material that was never explicitly noted in canon (i.e. made up exclusively for the Encyclopedia) or that came from unspecified materials that have yet to be identified on screen. A majority of these references are related to Federation starships, notably their registries, class designations, and some of the classes themselves.

It does seem kind of strange that Starfleet has a squillion of different ship classes in service, but the Romulans only had two classes of warbirds in the 24th century.

Those are the big fronline explorers/galaxy-class equivalent. Closer to home they might have dozens of smaller more specialized classes just like the Federation. Same thing with the Klingons.

Antares a civilian Antares class was in Ensign Ro. it's not clear if that's the same as the supposed one from TOS.

In DS-9 ep "In Purgatory's Shadow" the U.S.S Sarajevo was destroyed by the Jem-Hardar fighter in a suicide attack. According to the Star Trek Encyclopedia the Sarajevo was an Instanbul Class Star-Ship...

Yeah, there's loads of conjectural ones.

I liked the battle in FC because they finally showed us some new classes , rather than reusing the Excelsior, Ambassador, Constellation, or Nebula models in countless TNG episodes.

There's also the Challenger class which was seen as a background model at Wolf 359. Personally I'd rather pretend it didn't exist for aesthetic reasons. (See it at Ex Astris Scientia.) Ex Astris actually has a pretty good analysis of the various classes starting here for those inclined.

There was a class I saw in a comic once, it was like a half-Constellation (the top two nacelles) and half Constitution (saucer, engineering hull). I think the ship was called USS Marco Polo. Did this design ever appear onscreen, or was it madeup for the comic?

Found it on Flickr.

An interesting design, and it seems to have the Constellation saucer, which seems to negate the need for the secondary hull with all that storage space. I've never seen it anywhere else and I'm 99% sure it was just invented for the comic.

the Sarajevo was never seen on-screen

There is no mention of the Nova Class.

That list is incomplete.

Its missing the:

Constellation: USS Stargazer
Nova: USS Equinox
Prometheus: USS Prometheus
Wells: USS Relativity

As for the Surak class....its possible that the ship that escorts Spock to the Enterprise in TMP is Surak class. It was named the Surak and was not a typical shuttle. It possible that it was a long range transport.
