Bryan Fuller's ideal version of the look of Discovery wouldn't necessarily have been what we saw on screen. At some point he was hyping up uniform colors that didn't end up being used.

We don't really know about Trill symbiont life cycle. It could be that the Tal symbiont took multiple decades off between hosts to stay and reproduce in the pools.
"The Burn decimated our population, particularly those capable of joining. We no longer have enough viable hosts."
They established in Equilibrium that "virtually half" of the Trill population was capable of joining. The casualties from the Burn must be much more significant than previously...
