Star Trek TOS Re-Watch

. . . I was even one of those lucky ones to have seen the show in color on its premiere, but it couldn't possibly have looked back then as good as it does today. Those old CRT TV sets from the 60s were pretty bad by today's standards.
Also, back then they were broadcasting from 16mm film prints. The video masters were made from the original 35mm negatives, which give a much sharper, clearer, more detailed image. Maybe a bit too sharp and clear when you can see things that didn't show up in the original broadcasts -- like coffee stains on Spock's shirt.

What metal plate? Which movie?
 
The Starship dedication plaque tag line presumably. The Enterprise is "To boldly go...", Voyager is a line from Tennyson, etc.

"Risk is our business" would be suitable for a plaque, but I don't believe it's been used yet.

My wife and I went on a studio tour of Paramount a couple of years ago.

One of our stops was the shop where they make all those.

OTOH, as far as I can find online the plaque doesn't make its film appearance until the fifth movie, so it's likely one of many cues taken from TNG and might have been Mike's idea or Zimmerman's.
Roddenberry Archive confirms Okuda designed it for TVH. The plaque depicted on their bridge recreation is his original design that appears in Lora Johnson's Mr Scott's Guide to the Enterprise, which Okuda provided along with the Enterprise-A bridge graphics.

However, they note that the actual prop that was used on set was different, but has been lost to history. It wasn't seen on screen, but was there on set in the starboard turbolift alcove. Either way, Mike brought back the plaques and designed all the subsequent ones that appeared on TNG and the following movies and series. :)

I thought the captain catch phrase such as "Risk is our business" is on those plaque. Where are the ones for Voyager and the one for Enterprise E?

The top one is Kirk. I don’t remember the others off the top of my head.

This was just one part of the shop. There were different plaques and signs all over.

Second one appears to be the Enterprise-D (picture is too difficult to see better with zooming on my phone, but it could be the Enterprise-E, given the combadge emblem on the top of that plaque), under that is Archer's NX-01 Enterprise, and on the bottom is the Relativity from VOY's "RELATIVITY".
