They probably have a Quasimodo.

I was thinking of the scene in the beginning when the non-stolen shuttle is approaching the DS, but I could be wrong.

No, that one drops out of a Star Destroyer IIRC. The approach shot of Tydirium is the one with the mysterious planet/other moon in the background.
I don't think so. Surely no scene that I can remember watching or reading about over the years.
Wasn't there supposed to be a subplot showing that Jerjerrod was a Rebel sympathizer? Or am I misremembering?
in earlier drafts his role was substantially larger, owing to the fact that he functioned as the Emperor's "secret agent," operating behind Vader's back to further the Emperor's plans. In these versions of the script, Vader kills Jerjerrod for his subterfuge.
I don't think that was ever in question. They're definitely planning on doing more in-camera practical work than the prequels had, but I think that anything ILM supplies will be CGI. They sold off their model shop in 2006, and I can't imagine them reinvesting in building one up from scratch.Going to depend on what the script calls for. I still believe there is going to be a healthy helping of CGI in this movie, even before the Ford injury.
Although I think as a kid I used to always assume the big world we see IS the main planet of Endor, and the moon they landed on was either out of shot or on the other side of the planet or something.
