Great scenes with no regulars....

In addition to those already mentioned:

Uhura almost getting seduced by the salt vampire.

Uhura singing "Beyond Antares".

Uhura buying the tribble.

Nona's "this small box will kill you" scene in "A Private Little War".

The defeat of the Klingon in "Friday's Child" is largely independent of the main cast.

Chekov almost raping Mara.

This doesn't really count as Kirk has a few token lines, but I thought the back and forth between Lokai and Bele in sickbay was pretty solid, managing to get a decently compelling scene despite the somewhat ham fisted nature of the story.

Technically, only Shatner, Nimoy, and Kelly were regular cast members. Everyone else was a day player.
 
Interesting that Mark Lenard gets mentions for both of his guest appearances. I wholeheartedly that they are both splendid performances, but "Balance of Terror" doesn't really break any new ground. The enemy that you end up admiring is nothing new, although rarely so well played. Sarek was something entirely, just try to figure out how many different layers there were to that performance and it's mind-blowing!
