I'd prob take the one behind the sovereign in this pic. The Excalibur class, a Fanon design I remember seeing in the late 90's. It"s huge, so your not cooped up. plenty of things to do on board in between the huge variety of missions this behemoth no doubt partakes in.
Just my luck, I'd be in the bow, need to get to the aft end for a emergency and the turbo-lifts would go out. That'd give me something to do, run flat out for thirty minutes.
Site-to-site transporter using the separate transporter systems of the auxiliary craft such as shuttles. And if that isn't working, you use internal sensors and shipwide holoemitters (my ship has them, so I'm assuming this behemoth does too) to be telepresent. And if that doesn't work, then, yes, run - assuming the closest bulk replicator isn't online to allow you to quickly replicate a bicycle.
I like the Intrepid class. Designed as an exploration vessel, but also packs a punch and isn't huge and wasteful like the Galaxy class.
Excelsior easily, still the most elegant design to me. Galaxy comes in at number 2 and you know what... honorable mention to the blue-collar Miranda. From non-canon I'm partial to the TrekLit Vesta class.
