In Helsinki they have to remove 40 tons of fat per month from the sewers just under one street. Also, last year one of the sewers was clogged in the city center. This caused few cubic meters of fat and brown stuff to flood the streets in front of a fine hotel. I bet the guests weren't impressed.

Well, that street is full of restaurants and they just pour fat straight into sewers. They should be using fat traps, but I think they just don't care.

I've been called out to inspect both septic tanks and grease traps before. Grease traps far and away are more disgusting. The smell is enough to make the guy pumping it out (who is presumably around septic tanks daily) to gag.

I used to work in a building that was retail on the ground floor and offices upstairs. We were right above a Chinese takeout joint. Now and then they'd take a sump pump and just pump the trap out into a field behind the building. It stunk up the joint so badly it was hard to focus on work.

The food there was awful, so I don't know why someone never called the board of health.
