I think people like WWII as a setting for video games because it has such clear heroes and villains. That kind of narrative simplicity is lacking in most wars. It's hard to find a greater real-world evil than Hitler and Nazi Germany.
I'd say that's a very western point of view. If you look at what happened in the eastern front during the WWII, lines between heroes and villains are very muddy at best.
Contrast this with WWI where you had a bunch of European monarchs throwing bodies at each other in a prolonged and pointless pissing match.

Wilson was an imperialist, but it never caught on in a major way and was not embraced by the population till the end of WW2.The Americans tried to find a moral reason to join the war but that's because they had absolutely no reason to join except to prove that their soldiers could fight too.

The Soviet campaign was there because Treyarch wanted the game to be about the end of World War II, so they focused the campaigns around the fall of Berlin (even though Infinity Ward had already covered it in CoD1) and the Japanese surrender. I agree that including yet another Stalingrad mission was a little lame, but they made it somewhat interesting and they put it to good use in an important part of the storyline for Black Ops."World at War". It was pretty good until you got the obligatory Stalingrad mission at which point I stopped playing.Which was the Medal of Honor game that focused onthe Pacific Theater? The only interesting games made about WWI involve air combat. A realistic ground combat game set during WWI would just be horribly depressing. A more pointless waste of human lives, the world has not seen.

Thousands perished fighting for months over a mile-wide strip of land. Stuff like that isn't engaging or fun, it's just awful.

That is a very western take on the First World War. The front lines in the east were much more fluid and trench warfare was the exception rather than the rule.
