An elderly Admiral Chekov appears in the Vulcan's Soul trilogy, which is set in 2377.

Unfortunately, while I enjoyed the Vulcan's Soul trilogy, I found Chekov's appearance to be rather pointless. He didn't seem to serve much of a purpose other than to please with his very presence. I know Trek lit does that quite frequently, but this was a particularly notable case.

I think the only one we don't know about is Sulu. Kirk's alive again in the Shatnerverse. The rest are alive in the main litverse, at least the main crew. However, it wouldn't surprise me to see some of the secondary characters show up at some point (Rand, Chapel, Kyle, etc).
Only in the Crucible continuity. In the "normal" continuity, McCoy is alive and well during the Dominion War and beyond.
Sulu appears in the Deep Space Nine Day of Honor book.

Rather, an elderly Starfleet officer who is strongly implied to be Hikaru Sulu appears in that book. The identification is never made explicit.
Porthos gained Q powers and is out to conqure the universe. Lol !!
A similar strong implication was made (IIRC) of McCoy helping out with relief efforts post-Borg invasion / war in A Singular Destiny.
And seriously, let these characters die already in the 24th century.
I really don't have a problem in believing that in the REAL world, life expectancy will be over 200 years in the 23rd/24th century...
Quite possibly, but canon evidence suggests that in the Trek universe it's more around 140 at maximum. In one DS9 episode, Jadzia says she expects Chief O'Brien to die in bed at 140 surrounded by his descendants, implicitly the best possible end he could hope for. If human life expectancy were, say, 210 in the 24th century, then that would be equivalent to someone today dying at 60, which would hardly be seen as a desirable outcome. So it stands to reason that 140-150 is considered to be around the upper limit of natural human lifespans. That's borne out by how decrepit McCoy looked at 137.
McCoy's presence in ASD is pretty explicit, actually - he's mentioned by name.
