My favorite canon ship is the Nova class,
Non-canon - Katana class found here http://shipyard.scifi-art.com/katana.html it looks like an intrepid without the folding pylons
Then there is the Yeager class. I'm not sure if it is canon or not. I like it if the lines were cleaned up. It has a hotrod look to it.
About the only thing I really hate is the standard TOS shuttle (Galileo, I think) It looks like a milk box on rockets.

I strongly dislike the majority of Star Trek's starship designs however, the original series USS Enterprise is a beauty, a work of pure art, and the refit version of that ship from the TOS movies is an improvement even upon that!

The perimeter action ship I have viewed it as the Escort like the Defiant
