Well, only if the UST was a driving force of the show to begin with and not a minor character point.
And it doesn't always fail, Niles and Daphne were still entertaining, Crichton and Aeryn, Odo and Kira, etc. If you don't make it a series point to have them always playing "Will they or not?" or have too much of their characters be based on their indecisive relationship (ie, write them well enough that their characters won't suffer from getting together) then there's nothing wrong.
And Moonlighting didn't suffer from them getting together, they weren't even TOGETHER on screen very long since they were always apart. The show was just winding down regardless.
"The X-Files" did this nik-nack-paddy-whack of an ending didn't solve anything and like "Moonlighting", proved that leaving sexual tension between characters is often a benefit.
