Here's mine:

Star Trek VI, the day after:

Kirk and Spock are playing chess aboard the Enterprise-A.

Spock: I understand it was quite cold on Rura Penthe.
Kirk: It was absolutely freezing!
Spock: Was McCoy able to deal with the temperature?
Kirk: No, in fact, at one point when we were making our escape, he fell down, started whining and insisted I leave him behind.
*Awkward pause*
Kirk: What is it, Spock?
Spock: He did the same damn thing back on Sarpeidon...
 
I've always kind of wanted to see that missing scene in TMP where Kirk persuades Starfleet Admiral Nogura to return the Enterprise to Kirk's command.
 
^ Yeah I think that would have been cool since Kirk tells Sonik that he'll only be less than an hour or whatever it was.
 
Hmmm... I'd like to see how they convinced Uhura to do the fan dance...

Jim: C'mon, Uhura. You can sing and dance better than I can.

Uhura: Captain... I am not going out there!

Jim: Okay... Spock, bring the G-string! This is going to be the strangest rendition of Rocketman ever!

I think that's in the novelization of the film (written by Gene Roddenberry).

Nogura: Jim, Will's a decorated officer, supervised the redesign of the Enterprise and knows the ship better than anyone in the fleet.

Kirk: So?

Nogura: He's been on the frontlines of the service for 2 years, while you've been pissing and whining for the Enterprise back for 2 years in some office.

Kirk: So?

Nogura: The Romulans like him, the Klingons respect him; where as you've got death warrants from both cause of the incident on Nimbus III with the daughters of the Romulan and Klingon Ambassadors.

Kirk: So?

Nogura: So? Everyone loves this guy.

Kirk: You, your male Vulcan intern, a tube of KY, spring break on Risa, and pon-farr last summer. ~holds up communicator ~ And every news services in 200 light years in my pix-msg contact list.

Nogura: .... .... You win

And then *Commander Sonak is tragically killed in a transporter accident, along with Kirk's wife.

Revenge is sweet?
 
Kirk and Picard in the Nexus:

Kirk: You know, if Spock was here...

Picard: Oh Spock, you should know, he mind melded with me, as did his father, Sarek

Kirk: They're still alive?

Picard: Spock is, Sarek died about 2 years ago. McCoy is still alive, he's an admiral these days, oh yes and Scotty, he kept himself alive in a transporter for 75 years before we found him

Kirk: Oh god, now THAT is reason to go help you, to see my friends again, and to see what they are doing now? but first, tell me about Soran? You said he was onboard your ship, why don't we go back to that time, we could arrest him and send him to the authorities, and then I can see your ship and your crew, and my life won't be at risk, and I can see the bridge of the Enterprise D, and everyone can say "Wow, it's captain Kirk on the Enterprise once again!"

Picard: Now captain, that sounds like a much better idea, let's do that

This just sounds like a more natural conversation between two very competent starfleet captains, in my eyes anyway, more so than what was in the script.
