Requiem from the Darkness - quite grotesque and more horror than fantasy
Seirei no Moribito - has one of the best fight sequences I've seen (shame there wasn't more of that really), and is generally great visually, and has a superb, hard as nails female lead
Serial Experiments Lain - weird and depressing (seems very David Lynch to me)
Simoun - fantastic setting (though I didn't really get the ending)
The Vision of Escaflowne - about as FANTASY as it gets

A bit surprising considering it had all the elements I like. Personally, I consider Samurai Champloo the better of the two

Yeah, I liked Samurai Champloo, though I found the ending a little unsatisfying; but that's anime for you. heh
hasn't mentioned this one yet but the Kara no Kyoukai movie franchise
