I intially thought I needed to solve this puzzle through my experience running the school tuck shop, but that didn't help at all.There is a very simple answer that obeys its own logic.

I tried that and it didn't work.There is a very simple answer that obeys its own logic.
"Valentine" cards were 54p.
1p = Vowels
10p = Consonants.
Observe:
"Christmas" cards were c+h+r+s+t+m+s = 70p plus i+a = 2p, 72p
"Birthday" cards were b+r+t+h+d+y = 60p and i+a=2p, or 62p in total.
"Anniversary" cards were n+n+v+r+s+r+y = 70p, plus a+i+e+a = 4p.
