The Jedi are pretty objectionable with taking children so young and then demanding all those sacrifices of their lives. But for all their extremism, they seem to have a degree of pragmatism-we got to them so that the baddies don't. Joining the Jedi or being left alone, there's the chance that the Force-sensitive children could go bad, and naturally the Jedi have faith that they're the best way to avoid the Dark Side.
That the reason they take the children so young, so they don't have any emotional ties to anybody to cause this. Yeah, that's another thing I find really bizarre. Had Anakin been allowed to see his mother or live openly with Padme he might have been able to chill a little bit.
I'm not sure why she was shocked that slaves existed, given that the replublic just allowed a corporation that for some unfathomable reason has a seat on their senate to invade her planet and enslave her people.In TPM, Padme seems shocked that slavery still exists outside of the Republic. But aren't the clone troopers slaves?

Most people in the U.S. have never met a secret service agent. Does that make them legendary, or mean most people doubt they exist. What about a Navy Seal? Or movie stars?Add to the fact that the bulk of the galaxy would never have seen let alone met a Jedi before.
Understandable, but of mediums (the term for such people) were a huge part of the governing body of your nation and made no secret of their ability to do things like it push objects or tell the future, it would be silly for the common citizen to doubt they exist.[ Maybe not a perfect comparison but I compare it to people who claim they can "speak to the dead." I can't so I'm very sceptical of their ability to do so, that is despite the fact I've seen many instances of this on TV in fictional shows and in "reality" shows like that one hosted by John Edwards.
