So once Sarah removed the IV line/sensors on her shouldn't some EKG been beeping CRASH CRASH CRASH?

I didn't see a sensor, just a blood line.

There wasn't an EKG Monitor - which there should have been in reality.

I saw wires going down around the back of her gown. I'd assume they were connected to sensors monitoring her vitals to an outside machine.
