I was looking at Navy uniforms last night for inspiration, and was wondering if anyone had ever thought up Starfleet MOS (military operational specialty) pins for the officers. I could've sworn I saw them online years ago, but I don't know where it might've been.

Not really, I mean even the "Monster Maroons" only had about half-a-dozen options and most of the others had considerably yes.
Personally, I've played with a few different options over the years.

Starfleet Dynamics had it, and its predecessor Line Officers, and Staff Officers books.
That rings a bell. - I knew I'd seen it somewhere, but I wasn't sure which one. I was thinking either that, the original technical manual or possibly the Galileo tech manual.
Some of those make sense, some not so much.
Command, Trainees, Cadets, Medical and R & D are all solid choices.
Tactical is distinct from Security but uses a symbol worn only by Security canonically (who instead use a non-canon symbol).
Special Services uses the Communications logo, but doesn't include Communications (which is grouped with Navigation under a non-canon symbol).
Helm is grouped with Engineering under the canon Operations (but possibly not Engineering) logo, and doesn't include Tactical despite Helm (and/or Navigation) being responsible for that function during the era.
