FFS, they temporally made Pike Fleet Captain when he met Kirk the first time so it wouldn't contradict that line from The Menagerie.
Which they broke three episodes later when Kirk returned for the musical episode. They went through all the trouble of making Pike a temporary Fleet Captain so that the line in the Menagerie was still accurate, then had him return again and threw it out the window.

Did they say it was only once?

I think a lot of fan interpretation over the years assume only one meeting but that's not indicated one way or another.

How? Never said they didn’t meet again.
I just went back and rewatched the scene, and you're right. The dialogue is:
> You ever met Chris Pike?
> We met when he was promoted to fleet captain.
I had thought the line was "We only met", which probably was the intention of the writers originally, but is just of a technicality to not break canon.

"We met when he was promoted to Fleet Captain..."

They MET when he became a Fleet Captain. MEETING someone implies the very first encounter between two individuals. By the musical episode they were already acquainted. Have people conveniently or predictably forgotten the definition of "met"?

Yes.

Because 50 years of assumption, fan interpretation, and such have added layers upon the original meaning of that line.

Welcome to fandom where everything is made up and words don't matter. That's right, the words are like something out of Alice In Wonderland. It just doesn't matter.

I am a Star Trek fan. The definition of the word "met" has never been canonically featured in onscreen Trek and therefore I do not accept the legitimacy of it. In absence of canon, I have only my head canon, in which of course "met" means the same thing as "only interaction with."

;)

tbh the Gorn were pretty slow in TOS. that said, idk about making them into straight up monsters either
I don't agree with the Gorn either, mostly because Alien is one of the worst properties out there to ape, but assuming all Gorn are like one example is a bad idea. That's like assuming all humans must look and act like LeBron James.

Wasn't the Intent was when Pike was permanently promoted to Fleet captain, Kirk met him?
Can't find anything in brief research. The line is just he was promoted.

Probably assumed to be permanent, but then Spock is "Lieutenant Commander" in "Tomorrow is Yesterday" so who knows?

Well yeah but SNW hasn't shown other Gorn besides these
