Fair point, but maybe they just didn't want to deal with trying to explain it or deal with potential fan backlash over destroying the E-E on screen?

I think the whole refit thing is a clumsy way of trying to square the circle of having the Titan be Riker's old ship but with the Neo-Constitution design. If the novelverse Titan hadn't appeared in STLD, they probably would have said the Titan looked like that since 2379. And according to Dave Blass, the original plan was to have the Stargazer in season 3, not the Titan.
That's essentially correct. Matalas wanted the Titan to be both the ship referenced in Nemesis, and a new design that invalidated the previously non-canon Pocket Books version. In that, I actually fully agree with his rationale, as I never liked the novelverse design and felt zero need to canonize it. Unfortunately LDS got in the way of his plans. Now if I were Matalas, at that point I would have just changed the ship to another vessel Riker commanded after the Titan but before he retired, to make it more feasible that the ship was still a former command of Riker's and Shaw still had to purge the system of Riker's settings once he took command. But he still wanted to stubbornly link it to Nemesis, so we got the convoluted mess of the Titan-A.
