Because honestly - Jean-Luc Picard has always thought of the USS Stargazer as 'his ship' (he affirmed that to Scotty in TNG S6 Relics; and again at the start of season 2 of PICARD when he came aboard the USS Stargazer A); so yeah, the reaction to seeing the Titan - A renamed to the Enterprise - G in that scene just doesn't fit the character.
It may come down to the animated shows being lower budget and having lower stakes, leading to more creative freedom. STLD made some massive mistakes out of the gate, but achieved consistent stability by the end its first season. PRODIGY has some tough not really Star Trek episodes, but quickly begins an unexpected meteoric rise. Whereas DISCOVERY was too big to fail, so faced constant creative instability. Only SNW will have season to season creative stability for three seasons in a row. And the live action series are so obsessed with being "cinematic", they have the real estate wasting 2.39 to 1 aspect ratio.I find it interesting I've been more frustrated with the current live action shows than the animated shows. I take them all seriously. But I think there's a freshness the animated shows have. Maybe it's the literal colours? The live action shows are quite dark. I'm sure this plays a part in how I feel about them. Not every TV show needs to look like a small movie.

I think his reaction to the rechristening of the Titan-A to the Enterprise-G is less about what Picard considers to have been "his" ship than it is about him realizing the ship was renamed in honor of himself and of the rest of the Enterprise-D command crew. He's recognizing it's not just about him.
