I would argue that the "texture" is just more sleeve decorations, considering the texture is row after row of freaking logos.

I don't have any problems updating the monster maroons, but to stream line it. When Admiral Kirk stepped on the bridge in TWOK, it seemed the jacket was 2 inches thick and had trouble moving in it. No problem having them redesign it to fit better, be more comfortable. But adding the shoulders/sleeves was to much. They said they wanted to Link it to SNW.. well, Why? TWOK uniforms don't link to the Tos uniforms. there there own thing.
Otherwise Anson rocked that uniform, and in general, that maroon stands out and just looks damn good, like Marine dress blues.

Everyone in TMP would've looked better if Spock's notched collar had been part of their standard uniforms."Screwed up" in the sense that the new design is worse than the original.
Nobody's debating whether the design comports with established canon (which would be a pretty pointless argument where SNW is concerned), but that they took an already too-busy and fussy design and made it even busier.

And if they had two-toned the uniforms like Kirk's Admiral uniform with the sleeves and outer panels being darker than the central chest and back panels.

Yep all of that, and slightly padded shoulders. There is a strong TMP vibe to the medical outfits in SNW and Discovery. A modern update would be easy.

I belive it was for makeup purposes for Nimoy. So don't mess up the makeup.
The "gold piping" looks like Mylar soutache braid that you buy off of a roll at any fabric store for a few cents.

We don't watch Sci fi for comfortable costuming! Where would we all be if Jeri Ryan had been allowed to wear a sensible, logical, practical outfit? Plus the Borg generally would look like an avant-garde mime troupe if wearing leggings. Next you will be suggesting that aliens should not have to wear uncomfortable prosthetics.
