Starship design history in light of Discovery

Secondly the discoprise was shown to be 288 meters in an in-universe graphic

An outdated graphic I'm afraid. All the info is pulled from the old Joseph technical manual I believe (basically copy-pasted without care I assume), and the orthos of the Enterprise is that of the John Eaves design before the CG guys tweaked it (most noticeable difference is the orthos has straight pylons still).

Besides, based on what we see on screen there is no way the TOS Enterprise is only 288m long.

I calculated these sizes based on the enetrprise size discrepancy. Secondly the discoprise was shown to be 288 meters in an in-universe graphic
It was definitely an onscreen graphic but there were too many discrepancies for it to be the Enterprise currently floating off Discovery's starboard bough.

I have the same attitude to the graphic shown in Day Of The Dove - that drawing of the Federation starship next to the Klingon cruiser is not the Enterprise, the saucer is wrong for a start!

Your profile pic scaling is likely inaccurate. the realitivty is proabbly huge
I'm no expert on this. EAS and Eaglemoss reckon the Relativity is small, around 150m. Based on the hull/window ratio.
In STO, where the screenshot was taken from, the Relativity is a medium-sized science vessel.
For such a small ship with a dedicated mission, it could explain why the first officer was a lowly science lieutenant instead of a commander or lieutenant commander.

Edit: Here's that image, proper: https://memory-beta.fandom.com/wiki/USS_Pastak?file=Enterprise-C_and_Pastak.jpg

According to Memory-Alpha regarding the Wells Class

"The scale included on Sternbach's design schematics indicates an overall length of approximately 640 feet (195 meters)"

The sketch doesn't have windows though.

We either have to scale all pre discovery ships up, or scale all post discovery ships down
We don't have to do either
