Sooner or later two time travelers from different timelines are bound to bump into each other. This is precisely why the “identical until the fork, but containing all possible time travel” approach can’t work: the past would be so polluted by time travel that it would not make any sense at all.

All these changes are quite explainable using the above ripples theory as well, though, without the need of resorting to parallel universes.

About Spock, what could he do to fix the timeline, realistically?

Even if he brought back the JJ enterprise to the moment Nero arrived there was no guarantee they would be able to stop the Narada and even if they did that two future vessels fighting each other in front of the Kelvin would still end up having unknown effects on the timeline.

The only way to fix things would have been preventing Nero from traveling back in time, but that’s not possible because it happens in the future of another timeline.

The Guardian of Forever. He knows where it is and he could easily go to that and find a way to correct the timeline, such as jump aboard Nero's ship and sabotage it before it could do anything. That tops my list, but there are many other ways he could have done it. But if he realized they crossed into another universe he would have no need as the future he remembers is intact.

The guardian of forever’s interface isn’t exactly the easiest to reach a specific point in time, but even if he managed to get on the Narada and somehow blow it up as soon as it emerges it would still interfere with the timeline, as the Kelvin would see it and investigate, and there is no way to forecast what that would cause.

I wouldn't trust the Time Cops to rescue my cat from a tree, let alone trust them to patrol the timeline. In both instances that we saw them, it turned out that the Time Cops were actually responsible for the problems they were sent to fix.
