I think the main in-universe reasons were basically two-fold: -
I mean it takes a full decade to grow and fully train a Clone cadre. Compare that to Han Solo who went from "recruit in off the street" to "front line trooper" in 3 years (and that's not counting the time he spent at the flight academy before being busted down to "cannon fodder".) If Star Wars were a medieval style fantasy setting, the Stormtroopers wouldn't be the elite foot soldiers, they'd be the hapless palace guards that the heroes wade through on their way to rescue the Princess from the evil sorcerer.
From a meta-textual POV, I suspect the real reason is that after the release of the prequels and especially TCW, Lucas took note of how attached a lot of the younger audience got to the Clones as a whole, not just the likes of Rex & Cody and it was upsetting/confusing for them to watch the OT and seeing them all as baddies now. So although initially intended the Stormtroopers to be just lower quality clones (Exhibit-A; Jango's helmet bash gag) he changed his mind and made them conscripts instead.
- When you have an Empire, you find yourself with a very large population in need of control and historically the most efficient way to do that is set a large portion of the population (mostly from the poorer parts of society who will appreciate a little law, order and not having to get their meals out of the garbage) to the task of controlling everyone else and each other.
- It turns out the Clones weren't quite as loyal as advertised, and the best way to make sure your regime to survives any potential uprising from the rank-and-file is to make sure said troops aren't *too* effective at what they do. Clones were soldiers made for war. Stormtroopers are basically paramilitary police. Much more disposable, easily replenished once the Empire started expanding out into the Outer Rim worlds and of course much cheaper to train and equip.

I checked Wookiepedia, and in the article about Clone Troopers it says that they introduced non-Clone Stormtroopers because the clones were getting too old and they couldn't make more because the cloning facilities on Kamino had been shut down. The Kamino article doesn't say anything about why it was shut down.
I would think the Empire wouldn't want to spend more funds on new clones after the Clone War ended, thus the faculties on Kamino would probably be nationalized (Imperialized) and the last batches of clones paid for by the Republic and early Empire raised until they were old enough to be soldiers, and handed over to the Stormtrooper Legions. These would have come of age around the time of, or just a few years before the starting events of the film Solo. It would makes sense to start heavy recruitment drives in the year or so following the inclusion of the last of the Clone Troopers into the ranks.
By the time the Death Star become operational, those last batch of clones would be around 18 years old...and have served for around 9 or 10 years. Their bodies appear to be in their late 30s and would likely still be viable troopers and even officers in the Galactic Empire. But the Empire would be running out of them over time. These same troopers, by the end of the Galactic Civil War, some five years later, would be near the age of 25, but their bodies would be in their late 40s. These surviving troopers would start to be past their prime, unless they too could keep up their bodies like Captain Rex (who would be over 35 years old with the body of a 70 year old man, and still fight at the Battle of Endor).

This book was released very early in the new canon (2014), so you can chalk this up to early instalment weirdness, but in the Tarkin novel, Tarkin found it odd to see a clone still in an active duty role, and that book was set only 5 years after ROTS.
But as I said, really early in the new canon so not everything was fleshed out yet.

Its been suggested that by the Battle of Yavin, only about a third (at best) of the Stormtroopers were still made up of clones, and these were aging clones. Many of them died on the Death Stars.
While not all sources suggest it, the idea remains that the 501st (Vader's Fist) is the last unit that uses primarily Clone Troopers in its ranks on Darth Vader's orders. A large number of these would have died on the Death Star, so after The Battle of Endor, there wouldn't be many Clone Troopers left in Imperial service.

I'm sure it is not canon any more but the full story presented in Battlefront 2 does a great job of showing how the clones transitioned from the GAR to the Imperial Army.

Did Palpatine control Kamino?
Just finished season 3 of the clone wars (for the first time) and there's an episode where the Emperor tricks the senate into deregulating the banks, so that the senate could borrow more money to make more clones, and the banks could charge a higher level of interest on the loan.
This tells me a few things.
1. Chancellor Palpatine does not have full access to the treasury. They can still get him on fraud or corruption, if he tries to build his death star, or other selfish projects, he doesn't care to explain about to the little people.
2. Chancellor Palpatine directly or indirectly controls/owns the banks. The Senate and the Separatists are both borrowing money from him, and he's charging an exorbitant degree of interest to both halves of the galaxy.
3. Chancellor Palpatine directly or indirectly controls/owns Kamino. The Chancellor is gouging the senate, by selling them clones that they probably do not need, with money they borrowed off him.
4. Chancellor Palpatine directly or indirectly controls/owns the battle droid foundries, and he's charging the separatist (world')s through the nose, money that they are borrowing off him, to buy Battle droids that they really probably don't need.

Once the Chancellor became Emperor, he didn't have to dick around, to take money from the Treasury, without bean counters getting up his ass, so Kamino and the foundries were closed down because they are redundant.
There was that spider like imperial officer, Imperial Protectorate Gleb, from Battlefront II .
I always thought the Empire was just prejudiced against aliens.
Indeed, Mas Amedda actually kept his position as second in line after Palpatine even after the Republic transitioned into the Empire.
