Is there a list of all the minor/obscure starship crewmember positions?

You missed Quartermaster from Tomorrow is Yesterday:
KIRK: That flight suit must be uncomfortable. (to Spock) Why don't you have the quartermaster issue him something more suitable? Then I want to meet you and him in my quarters.
 
What was Rom's job on Deep Space 9? "Waste extraction" which was the 24th century euphemism for maintaining the toilets.

Which is somewhat ironic, since one of the main disagreements between me and several of the other "pro-enlisted" posters is that I often insist that Quartermaster is used in the above, canonical, military & civilian meaning, rather than the naval meaning (usually navigator, helmsman or both).

His full title was Diagnostic and Repair Technician Junior Grade, his initial assignment was Waste Extraction, which could be simply the toilets, however I would imagine that the DRT rating includes elements several USN ratings or broadly the USCG Damage Controlman rating - "Fabricates, installs and repairs shipboard structures, plumbing and piping systems; uses damage control in fire fighting; operates nuclear, biological, chemical and radiological defense equipment; construction work" - possibly with a few bits of the Machinery Technician rating "Operates, maintains and repairs ship's propulsion, auxiliary equipment and outside equipment such as steering, engineer, refrigeration/air conditioning and steam equipment".

Personally, the section I find most interesting is the "Security" one, which he originally - and IMO accurately - combined with much of Command and Special Services at unit level.
[NB: These are my interpretations of the names, I invite debate on any faults in my logic]

- Ship Control Police = Internal Security [equiv to civilian patrolman/guard]
- Honor Guard = Ship's Security (special occassions, VIP escort etc) [probably not a regular assignment except in major commands]
- Shore Marshalls = short-term prisoner holding and transport, fugitive retreaval, JAG bailiffs/guards.
- Special Intelligence = Criminal Investions & Counterintelligence Investigations. May correspond to any or all of "Inspector General's Office", "Internal Affairs", "Starfleet Security", "Starfleet Intelligence" mentioned in canon.
- Special Forces - "Starfleet SWAT", VBSS, hostage rescue, hazard environment ops, covert operations. [possibly known as "Sierras" or "Sierra 3" for short]. Roughly correspond to UE's MACO unit and Vulcan and Andorian Commandos of the same era.
- Federation and Fleet Penal Personnel - "Starfleet Corrections", responsible long-term housing of prisoners, liase with Starfleet Medical on treatment and rehab and Starfleet Shore Marshalls on prisoner transport.

One job that each century of ships needs, and probably a good amount of them, are Damage Control Personnel. They can be sort of jack-of-all-trades crewmen that can fix most damage on the inner and outer hull, ship's systems, etc.

And I don't mean just engineers, even though that's the department that would likely be assigned to.

While I agree (at least to a point), the Fletcher Notes don't mention Damage Control as a specific role. Assuming he didn't just forget/not understand the need, then he's probably following a non-US model (such as the Commonwealth) where a member of the Engineering team (Maintance, Repair & Operations section) is detailed to coordinate (either on-call or per shirt depending on numbers), but most of the work (especially during Battle Stations/Red Alert) is done by Security and/or Special Services personnel on a collateral duty basis*.

* There's probably somewhat of a relationship between the mission duration and crew size on this. Small, short-range ships like the Defiant, Saber or Nova are far more likely to operate this way than a large, long-range ships like the Galaxy or Sovereign.
 
Had another thought, would be make sense that the garrison at AR-558 was mostly SFs (HRT/SEALs equivalent), with one or more SI personnel attached (probably including either Captain (SAIC) Loomis or Commander (SSA) Parker) and maybe a few SCE (including CMN Kellin), rather than being normal everyday SCPs?

Although it may be worth noting that AR-558 appears to have been administratively under Starfleet Communications (the unit logo was the same as Epsilon IX station), so perhaps only one of the three senior officers actually belongs to the security team (most likely the survivor Larkin) and the other two were from SCOMM and SI instead.
