There's a paucity of factual info about the 70s in part because it was the era of not-made Trek projects, and few outside Roddenberry and a handful of people developing those had much exposure to what was going on. Few documents remain that I've ever seen.
I'd also include David Gerrold's The World of Star Trek which updated what the actors from TOs were up to, as well as the state of Trek fandom in the mid-70's.
FWIW, I've asked Larry Nemecek before whether he'll cover any PotT materials on his Trek Files series. There's an old thread here called Planet of the Titans Revisited (link) where I put stuff up over several years. A number of sites that discuss the film took stuff from it.
