Why would Damar or any other Cardassian kill Weyoun 5 knowing #6 would arrive shortly?
 
To be slightly serious, Damar was eager to throw off the Dominion, more than Dukat. He may well have been practicing, seeing how careful they were, how they might react, and just how quickly and effectively Weyoun could be replaced. Obviously, his first target when he publically rebelled was where they made clones, including Weyouns.

And the sadism, humor, and kanar.
 
They’re born with the knowledge Weyouns require programmed into them, but it doesn’t work like cylon resurrection. The same Weyoun consciousness doesn’t wake up in a pool of milk, a new Weyoun consciousness is created and any information only contained in the old Weyoun’s brain is lost.
 
Probably just something as petty as they had an argument earlier that day which left Damar pissed off, so he arranged Weyoun's accident.

Now that is interesting, I'd forgotten that bit. If they have a implant that allows for memory uploading perhaps it's in real time while aboard Dominion facilities. Or maybe they still upload at night but if the Dominion has access to the body and the brain is undamaged they can still scan it for the last few hours of info even if dead. We know they have advanced brain interfacing tech as demonstrated by the fantasy scenario they had Sisko and company go through.

He knew it had happened, is there any evidence I'm overlooking that he remembers the experience of it happening?

The Founders program memory into a new Weyoun that they want him to have, including those of his predecessor's memories they think he should know about. I'm not sure the Founders would even want to risk those memories going un-edited.

Anyway it's possible if the Weyoun's brain is intact they can preserve some memories, there's no telepathic downloading at the moment of death. Destroying the brain would still do the trick.
