I conjecture it was a post-mission entry moved "back" in time for the audience's (if there were any left) comprehension.

Some of his logs seem to be from the exact moment while others are recounting what happened earlier on! So I'd say they are all recorded at a much later date while he's eating a small ice cream in his cabin!
