Decorating icing. Who's got a good recipe?

I'd like attempt writing Happy Birthday on a cake for my wife but don't have a recipe for decorating icing. Does anyone have a good recipe they'd be willing to share?

Thanks!

You don't need a recipe.

Icing is made by mixing sifted icing sugar with water and a drop of lemon juice, adding sugar until you reach the desired consistency. If you want to make royal icing (which sets really hard) you need to use a beaten egg white instead of water. Either way, you can then make a quick and easy piping bag by filling a plastic freezer bag and snipping off the tip of a corner.

I watch too many cookery shows... :vulcan:

Isn't this, well, a recipe?

I know you're being Batman right now, but you don't need to show off your razor sharp detective skills to me. :p

What I meant was that it's not a recipe in the sense of needing exact quantities or complicated directions. Just mix and voila! Of course, I did miss out the most important step when actually piping: "one squeeze for the cake, one squeeze for me..."

I always add butter to my icing if I want to pipe it but not set rock hard. I find it gives that fluffy effect which often comes with cup cakes. I have an easy way to tackle those cup cakes and icing where you normally get the icing in the first mouthfuls and have none left for the rest. You slice the cup cake horizontally then put the bottom half on the top. You end up with an icing filling in the middle. it works for me, and I make lots of cup cakes, lamingtons, butterfly cakes and mushroom cakes as well as the lightest ever feather sponge. In my family all the boys were taught to cook. Anyone else who has favourite recipes.

 I think the cake in question was decorated and eaten a long time ago, Bluewhale.
Damn! I've never struck a website that doesn't archive such old stuff. I've fecken done it again. :brickwall:Thanks for your amusing way of letting me know guys. No wonder the Bluewhale is on the brink of extinction. :wtf:

Thank you Avro Arrow. I feel terrible bringing back an old thread and your comment has made me feel better. Cooking ideas of any kind are interesting to me at any time.

When there is no more room in the forum, decorative icing will walk the earth.
Well, in that event I hope the climate is not too hot or the earth will be covered by melted sugar. Although if it's really cold after the heat it might be ok for ice skating. And I haven't even thought of species that might be affected, how would snails manage? It could speed them up a lot if they become hyperactive, or alternatively they could die from osmosis. Not sure about other animals, suggestions perhaps?
