I never got how Female Shapeshifter had authority to sign anything on behalf of the whole Dominion, which they were not in contact with. Later, the Dominion could say "We didn't sign this."

An individual Founder has the authority to speak for the whole Dominion, and given she's the only Founder in the Alpha Quadrant during the war (well, aside from Odo). The Vorta and the Jem'Hadar back in the Gamma Quadrant aren't going to act against a decision made by one of their "gods" and Odo is exerting influence over the rest of the Great Link.

Why split hairs? "We signed this, but under duress" is enough to negate the silly treaty if somebody feels the need to formally negate it before smiting the UFP.

The Dominion has a certain regard for legalities. It's part of whatever system they've got. They left Bajor alone, according to that agreement. And it's just generally harder to function internationally if you're known for breaking treaties. They may need to be believed and trusted in some future situations.

Declaring the peace treaty null and void on somewhat lopsided legal arguments wouldn't hurt their rep any more than the actions they already took. They got away with dozens of first strikes before ending up as the "wronged party" when Starfleet defied their warnings against mining shut the wormhole. Another first strike to get into motion a just defensive war, yadda yadda, ought to work out fine, too.

Odo is exerting influence over the rest of the Great Link.

I don't buy that at all. Odo's pro-solid propaganda wouldn't hold up for more than 1 minute in the Great Link. Moreover, Odo becoming a pro-solid propagandist is ludicrously out-of-character for the character of Odo himself.

Realistically [albeit, I must adopt the unrealistic version of the Odo character that the writers themselves also adopted ever since they made Odo jump the shark, which happened when Odo inexplicably agreed to obey Sisko's evil order not to cure the Great Link], the communication would go something like this:

Odo: "Hey! You changelings were all wrong! Solids are kind, loving, wonderful people! Therefore, you must recognize that fact and start loving them all right now, just like I do!"

The Great Link: "Are you talking about the same solids that have just almost caused our genocide - deliberately?"

Odo: "Well, yes, but............um...err...durr...."

The Great Link: "Do you think that kind, loving, wonderful people would commit genocide against our people?"

Odo: "Um...err...durr...."

The Great Link: "Don't you believe in justice above all else, Odo?"

Odo: "Of course I do, that's my number one value!"

The Great Link: "Did you think you were being just when you obeyed Sisko's order not to cure us of the genocide disease that the Federation inflicted upon us?"

Odo: "Um...err...durr........................No, of course I was not being just! I must have been out of my mind! Laas was right! Solids have corrupted me into being their stooge...and even worse, an evil stooge! Please, I beg you to forgive me!"

The Great Link: "Our brother Laas is dead. You killed him, Odo, by spreading the Federation's genocide disease to him."

Odo: "I'm so sorry! I am ashamed of myself!"

The Great Link: "Odo, as a matter of self-defense so that the Federation never again has the chance to annihilate us, we will be regrouping and launching round two of our war. Are you with us or against us?"

Odo: "I'm with you!"

The thing is, though, Odo likes to argue, even against his own kind. He wouldn't go um-err-ah - he'd harrumph, cross his arms (even if he had to manifest those first), look down on the Link and say "You are worse than the Alpha Solids on all fronts, count for count, atrocity for atrocity. Ad I still love you for the affable rascals you are". Of course, he would be overruled, as in any good democracy or collective sapience or whatever, but he'd certainly inject his own piece of mind there first.

I think Odo's attitude toward solids (vis a vis the Founders) was much more balanced. See "The Abandoned," "The Begotten," "Treachery, Faith, and the Great River" and "Chimera."

Everything that the Female Changling was thinking about during the war was also available to Odo. Odo wouldn't stammer when asked about Section 31's attempted genocide. He would point out that the Female Changling planned to exterminate the people of Earth if they won the war, that they attempted to do the same to Cardassia, they deliberately introduced horrible diseases to various worlds in the Dominion, and would certainly have done the same to humans if they had the means.
The Dominion might argue that the Female Changling was exceeding her authority due to operating without contact with the Link for an extended period and her genocide was not the policy of the whole Dominion, but Odo would counter that Section 31 didn't represent the whole Federation either. I think the Federation comes off better than the Dominion in the war crimes department.
