Well, everyone cannot be an officer. Academy only takes the best and the brightest, getting in isn't easy.

But if you can't be bothered to do all that studying, you can just enlist. Then it is possible that you might end up as a janitor on a starship. But at least you get to go on a space adventure.

But actually I think the ship is supposed to be self cleaning. There should be tiny cleaning bots or something.

No one cleans the ship's general occupancy areas unless there's something actually interfering with the operation of controls, or someone brings a particularly nasty virus onboard. Otherwise, playing in dirt helps the kids keep healthy immune systems. And engineers clean the engineering areas, because those have to be clean for proper ship operation.

I don't know who cleans the Enterprise but I do know Captain Janeway's favourite form of punishment was to make Harry Kim clean the ship with his tongue.

Maybe the ship sanitizes areas where crew members are not present. I mean now in public bathrooms there are sensors which will activate the toilet and spray disinfectants when a user is not present. Think of that tech but more advanced from 200 to 300 years in the future.
