Saavik - Post Nemesis

The only thing I can think of is a reference in the first Titan book, Taking Wing. In the beginning, when Tuvok goes to Romulus to meet with Ambassador Spock, he says something along the lines of "Captain Saavik sends her regards."

True, but that scene takes place mere hours or minutes before the first scene of Nemesis, not after the movie.
 
She's in the late 24th century bits of the 'Vulcan's Soul' trilogy by Sherman and Schwarz. If I remember correctly it also brings Uhua and Chekov into the 24thC.

Still no sign of Sulu...

Vulcan's Soul is set mainly in 2377 as I recall. And does indeed introduce Admirals Uhura and Chekov in the late 24th century. A few months later, TLE - Catalyst of Sorrows would also feature Admiral Uhura in 2360.

Still no sign of Sulu...
Unless you count DS9 - Armageddon Sky's "George", who Bashir suspects to be an incognito Sulu.

There's plenty of post-Nemesis Mirror Universe Saavik… :D
