Will Luke and Ahsoka's first meeting ever be depicted at all?

None of those characters you mention by name are really that good.
Judging by the popularity of those characters, I'd say most fans disagree with you. Actually most of your opinions seem to be almost the complete opposite of the majority of fans. I'll admit I wasn't that fond of Maul in Phantom Menace, since he had no reason personality, but The Clone Wars and Rebels turned him into a fantastic character.
it straight up makes no sense in the way that retroactive continuity never does. When you write something decades later, it often doesn't slot in neatly with what came before. And any kind of twisting and bending over backward to make it fit is just that: desperate and contrived.

You can make up all the EU-esque justifications, but it makes no sense on its face because it was never meant to be there in the first place.
At this point we really don't know enough of what was going on with Ahsoka at that time to make these kind of judgments. There's no reason they couldn't come up with a perfectly legitimate reason why she didn't get involved with Luke. Yes, it will obviously be a retcon, but not every retcon is a bad one.

Any reason they came up with would be contrived and dumb. There's no reason whatsoever that Ahsoka wouldn't have heard about Luke Skywalker at the absolute latest after the battle of yavin and would want to meet him tout suite.

The majority of fans you talk to, maybe. But majorities are often quite wrong.

Not just fans I've talked to, I'm also going by the reviews I've seen and other comments and references I've seen on other sites.
But majorities are often quite wrong.
That may be true, but typically when it comes to things like TV shows, when the majority of the audience feels one way, including professional critics, and you feel the opposite, it's typically a you issue not a problem with the show. There are a lot of shows and movies that I love that the majority, but I'm not about to say all the other people are wrong, I'm just a lot more forgiving and clearly looking for different things than they all are. I'm also neurodivergent, so that might be part of it.

I'm not neurodivergent and am very forgiving. After the Prequels I learned a very important lesson; Star Wars isn't always great. I don't want it to be.
