We only got one appearance of Will Riker's father and that was in season two. I kept waiting for a return episode. Maybe have him be captured by Cardassians or Romulans and The Enterprise get sent to save him?

He returns in the books. You'll wish he hadn't.
Because it wasn't DS9.
Yeah, it was pretty much a self-contained story that was resolved (father and son reconciling after a difficult relationship). If he ever had to return, it would have made most sense to see him at the wedding, assuming he didn't pass away.
No more serious "daddy issues" to overcome.

Riker should have been concerned about one thing: Pulaski was almost his stepmother. 
Because just rolling out some character's family member and giving them a manufactured conflict which somehow involves the life or death conflict of the week is lazy writing? And after season 2 the writers didn't get lazy again until season 7?
``Dad, you're ... you ... you met someone my age in an alternate timeline and brought her back and now you're marrying her? ... And she's ... Wilma Thomasa Riker? Oh, I gotta have a transporter take my body apart and scrub every single atom clean now.''
Because (in emulation of Mike Meyers's Scottish shopkeeper) the first episode he was in was CRAP!!!
