It would also make a great sneak attack type weapon. Say you want to destroy an enemy ship yard like they did in DS9, open a geodesic fold, fire a few dozen photon and/or quantum torpedoes and buh bye ship yard.

...Assuming the enemy has built his shipyard next to a very special star.

And the trick of opening those folds doesn't only call for a matching pair of stars, it also calls for special equipment:

Real Barclay: "He may have found a way to incapacitate the crew, or to commandeer the ship's systems, but either way we've got to get the Carolina to close the fold."
Adm. Paris: "The Carolina isn't equipped to do that".

If a regular Starfleet ship can't do it (not even the closing part), odds are it's pretty darn difficult...
