What non-network shows should I be watching?

Now that network TV seems to just be complete garbage and they rather have "game shows" and these so called "reality" shows than actual well written shows I'm wondering what am I missing on other channels.

I saw some ad for a new show that I think started yesterday that airs after "The Closer", but forgot to watch it yesterday. It has Ed from "Ed" and Will from "Will and Grace". Then "The Beast" starts next week on A&E which stars Patrick Swayze, in what hopefully isn't his last role.

So in short I need some new shows to watch on FX, TNT, TNN or any channel like that, to make up for all the canceled ones on ABC, CBS, and NBC. Preferably shows that are in their first season so I can figure out what is going on. I also get HBO and Showtime, but I'm already watching all the shows I want to on those networks.
 
If you grew up in the 1980s then "Psych" can be a breezy, goofy fun show - there are endless 80s pop culture references... plus if you didn't think Dule' Hill from The West Wing can't do physical comedy, you'd be surprised.

USA- Burn Notice
Sci-Fi- Battlestar Galactica
Showtime- The Tudors

There are , of course, many great cable shows that have ended but I think you only want ones currently making new episodes, correct?
 
Dexter-Showtime (or Netflix). You won't be able to stop watching.
Burn Notice-USA. James Bond Meets The Equalizer Meets Bruce Campbell.
 
Showtime: Dexter, The Tudors

HBO: Entourage, Big Love

FX: Damages, It's Always Sunny in Philadelphia

AMC: Mad Men, Breaking Bad

Sci-FI: BSG while it lasts
 
More votes for Damages on FX, Mad Men on AMC, and Dexter on Showtime. If you don't already watch "Big Love" on HBO, get into it. It's terrific.
