It's hard to argue against the X-Wing, given it's such a cool looking and iconic design . . . but I'm going to anyway, because the B-Wing has always been my favourite! While 'Skeleton Crew' had much in it that was joyful, nothing made me grin more than finally seeing B-Wings in live action actually do something!

I gave my second vote to the U-Wing because aside from being a very cool ship, it managed to perfectly evoke the aesthetics of the OT ships, while still providing something fresh and with a utility that actually gives it a unique function beyond just being another starfighter. Aside from The Ghost; it's easily the best design to come out of the first wave of Disney content.
 
The X-Wing was my first pick, it's by far the most iconic ship, and in the games it tend to be the best all around ship.
I was torn between the Jedi Starfighter and the Naboo Starfighter for my second pick, I finally narrowed it down the Naboo Starfighter, it's just so sleek and shiny. It's basically the sportscar of starfighters.
Really like that concept - also fits with Naboo One being the Rolls Royce of starships in terms of design and purpose
 
Another vote for the X-wing. It was close with the B-wing, though. I guess, since I'm an old school SW OG, The fighters from the original trilogy are all iconic to me. That said, I do really like the U-wing. It's very sleek.
 
The Vulture Droid is my overall favourite starfighter.
B-Wing has always been my favourite Rebel starfighter, I love its asymmetry.
TIE-Defender is the best the Empire had to offer followed closely by the interceptor. I think I like pointy things.

Things would have been harder if the Arc fighter were an option now that was a beautiful fighter.
The N-1 has a special place in my heart because Phantom Menace is my favourite Star Wars film.

I wish they'd done more with the big chonky Jedi Starfighter we saw in Attack of the Clones, always preferred it to the mini version in Revenge.
