What changed about the Borg?

Otherwise all the bloopers and mistakes visible on screen would be canon too, wouldn't they? ;)

And Enterprise D would be powered by a hamster!

Am I correct in reading somewhere that one of the MSD's shows this as well as a bowling alley and the like?

I don't recall a bowling alley on the E-D MSD. There was one in the Franz Joseph blueprints of the original Enterprise, based on a reference to a ship's bowling alley in "The Naked Time." The D's MSD included a giant mouse (not a hamster), a giant rubber duck, a giant Nomad probe, a sportscar, a DC-3, what looks like a street-sign image of an adult and child walking hand-in-hand, and a "Slippery When Wet" sign. There's a circular shape I can't quite make out near the rear of the ship, which might be a registered-trademark symbol. There's also an odd silhouette in the main shuttlebay, right next to the sportscar; I can't tell what it is.

Okay, according to Ex Astris Scientia, the image of an adult and child is actually the Canadian symbol for a "Family"-rated film. And it is a registered trademark symbol under the warp engines. It doesn't explain the odd, rounded object right next to the sportscar (a Porsche).

Nope, as I said above, Ex Astris Scientia confirms that it's a registered trademark symbol. The hamster wheel is an urban myth, conflating the mouse with the longstanding joke of high-tech vehicles being powered by hamsters in wheels.

The Borg's MO changed because Janeway nicked their supply of coffee... LOL

Seriously as other have said I think they just had enough the Federation was like an itch that no matter how many times they scratched it came back and finally they decided that they would have to eradicate the whole problem. I do wonder as others have said about the Transwarps Hubs, unless all of them were neutralised by the destruction of 1
