I have the 2002 star charts, it sounds like the new ones are just 10 fold-out maps, half of them being in Klingon/Romulan, and the only updates are from late ENT and the nuTrek movies.
What are the new star charts like?

If you're talking about the Stellar Cartography map sheets, some are indeed more intended as art, but they're nonetheless interesting. The Alpha and Beta Quadrant ones aren't on the same level of detail as in Star Charts -- but on the other hand, they include revisions. Those two live on my wall as ready reference, with Star Charts handy nearby.
What are the new star charts like? Well, you can hang 'em on your spacecraft windows, and use 'em for sunshades. (I'm too much of an Apollo 11 geek to resist THAT one. I can't find a picture online, but if you watch Footprints on the Moon [the documentary, not the shlocky horror film], you'll see a live-from-space broadcast showing that Neil, Buzz, and Mike did exactly that).
