Was Ezri Dax a poor choice?

I'm afraid to say that I find Dax only gets worse, even in the DS9R. I know she has 300 years + of experience, but she doesn't think things through, I find her rash and insensitive and it bugs me because... she's got 8 people's memories to learn from!

Not really!

Having 300 years of experience does not change who you are. If your past host was a star fleet admiral and you are an ensign. It does not justify to make an ensign an admiral just because you have the memories and experience of an admiral.
 
^ Actually from what we've seen joining does change who you are. Jadzia and Ezri both said that when they were joined it changed them. Joran was made unstable and started murdering people thanks to his joining and we saw some pretty extensive changes to Verad when he was joined very briefly to Dax.
