I don't know why Voyager, Defiant and Titan's numbers were chosen, but I do know why the various STXI ships' numbers were: The USS Kelvin NCC-0514 was named for JJ's uncle, and numbered for his birthday (May 14), the USS Newton NCC-1727 was named for Sir Isaac Newton and numbered for the year of his death, and the USS Mayflower NCC-1620 was numbered for the year of the real Mayflower's journey.
