It's tough to judge an entire dynamic between two people from a single photograph. Maybe he's gripping her arm tightly, maybe he isn't. Appearances can be deceiving sometimes.

Serious actors are all about sending messages with body language. Nimoy didn't want to seem apathetic toward her. He wanted her to seem important, so he put some tension in his hand to suggest the energy that comes with liking someone, with being interested. It says he's not just focused on his own picture being taken. It puts some of his focus on her.
I'm certain he wasn't squeezing her. He was just tensing up his hand because he was a performing artist who thought about details like that.
Maybe Nimoy was just turning her towards the camera as they both made their way to the stage and were caught off guard by a fan?
