So, good people of misc, how to do you like meat? Seasonings, marinades, and whatnot? I'm a medium rare guy myself. But what about you?
I'm a foodie who hangs out with a bunch of foodies and chefs (including one who works at a smokery!), so we do a wide and ever-expanding variety of meats when we grill. One thing we rarely do is steak, unless you're talking skirt steak or london broil and such, which can be shared and dressed up. All beef is always cooked to rare or mid-rare. Anything beyond that is considered a massive failure and may be fed to the dog.
One of the old grilling standbys in my circle is beer can chicken, which is pretty self-explanatory:

Beer. I generally start with a couple good belgians and then move down to some refreshing Natty Boh.
What's wrong with charcoal?
All you taste is the charcoal, not the meat. Propane's the best option.
I have to disagree. The right briquettes or wood chips do wonders even for a superior cut of meat. I'm also a big fan of smokers.
