The Rogue Jedi, I keep getting my ass whupped by this guy even though I keep hacking at him with my saber and doing what the pop-up thing tells me to do which is move the nunchuck in any direction which will make Vader pick him up and slam him to the ground, when that's complete, the rogue Jedi will have more life! WTF?!?

Hmm, I don't think I can help you. I have the 360 version which is very different - and the first boss in the 360 version is pretty simple.

I just bought the game yesterday and ran into the problem you are having. Turns out that you have to follow the prompts on what to do with the wiimote and the nunchuck in the exact order they show you. It will usually show arrows pointing any direction around the icons for the wiimote and nunchuck. When you excute it correctly you then see Darth Vader, or later on his apprentice, do a power move. If you don't execute it correctly it resets back and the boss gets some of his life back.

It's frustrating as hell, but once you get it figured out it gets easier. I figured it out on the second boss you fight, which is the first Jedi you kill as the apprentice. It took me 20 minutes or more to kill him because I kept missing one prompt. The nice things is they do add packs around the room to give you life ( I don't remember what they are called ) everytime the boss resets back. So keep moving around.
