How much do shields and deflectors protect ships from damage caused by phasers and (photon or quantum) torpedos?

And how much damage would phaser or disruptor hits cause on unprotected ships in comparison with shielded vessels, considering we mostly saw torpedo impacts causing wide spread destruction in many battle scenes from the movies and in the shows (especially DS9 and Discovery)?

Usually, if your shields haven't collapsed after each hit, the vast majority of the damage should have been taken by the shields with only a minor amount spilling through.

And how much damage would phaser or disruptor hits cause on unprotected ships in comparison with shielded vessels, considering we mostly saw torpedo impacts causing wide spread destruction in many battle scenes from the movies and in the shows (especially DS9 and Discovery)?

If you can plant malware on Geordi's Visor and feed back the visual information on the Shield Frequencies to yourself like they did in Star Trek: Generations, you can do massive damage.

Generations isn't a good example imho, because beside exploding consoles on the bridge, there was nothing seen that happened in and on the impacted sections of the Enterprise-D (neither interior nor exterior).

And the Klingons used photon torpedos and not disruptors, during the combat.

The Bird of Prey looks designed to hit Fed ships. The disruptors are about as wide as two nacelles are, with the torp angled down to hit the impulse deck and then the bridge if they Klingon decloaks behind and slightly above.
 
In the game Star Fleet Battles, this would be the optional "Leaky Shield rule". Using the normal rules, you have to drop the entire shield (facing that direction) before any internal damage is done to the ship.
