Have ever shown phasers that fired in "bolts" rather than a beam?

If you are talking about TOS, that's the way phasers were fired in "Balance of Terror".

The phasers in The Wrath of Khan were fired in the form of bolts.

You can see the effect quite clearly.

Not entirely correct.

The "Mirror Universe Defiant", the first time it was introduced and fought Worfs monstrous flagship fired a number of "standard phaser shots" during the battle along with its traditional "phaser bolts".
